Easy Peasy Cake Mix

Last week Food Lovers Market had their R50 deals and I went a little overboard with the strawberries and blueberries. In my defence though how often do you get 3 punnets of strawberries or blueberries for R50. After eating enough berries that we started looking berries and freezing batches for smoothies I still had a lot of berries left. So the solution was my one-stop-shop cake mix which I used to make blueberry muffins and a strawberry tea loaf.


This cake mix is super simple and you can add just about anything to it to make it something different.

 

WHITE CAKE MIX RECIPE


  • 1 cup white sugar

  • ½ cup butter

  • 2 large eggs eggs

  • 2 teaspoons vanilla extract

  • 1 ½ cups all-purpose flour

  • 1 ¾ teaspoons baking powder

  • ½ cup milk


Step 1

Preheat oven to 160 degrees. Grease and flour a 20cm loaf tin or line a muffin pan with paper liners.


Step 2

In a bowl, cream the sugar and butter. Then beat in the eggs, and stir in the vanilla.

Combine the flour and baking powder and add this to the creamed mixture and mix well.

Finally, stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.


Step 3

Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. The cake is cake when a toothpick comes out clean.


This mixture makes approximately 15 medium medium-sized muffins.
